Cooking for Mother’s Day

 
Mums are awesome – they work so hard to make our lives easier. Mums are taxi drivers, administrators, decorators, nurses, cleaners, event planners, master chefs and all round organisers. There aren’t many things that truly show how much we appreciate our Mums, but without them; well, we wouldn’t even be here!
 
If you are stuck for ideas this Mother’s Day, here’s a suggestion – how about you give Mum the night off? For most Mums I know, a night of relaxing while someone else does the work is the BEST GIFT EVER!
 
This Mother’s Day, how about cooking Mum a delicious and nutritious meal that will have her feeling good, inside and out.
 
Since Mum’s are some of the hardest workers around, they need plenty of protein. Here is a protein-packed idea that will wow your Mum!
 
Stuffed Chicken Breast
 
Medium-sized chicken breast butterflied (Herb can do this)
1 tablespoon basil pesto or chunky dips basil pesto, cashew and parmesan
1 tablespoon cottage cheese
1 small handful of baby spinach
Sprinkle of cheese (I recommend parmesan/feta)
Sprinkle of mixed herbs
1)Put all ingredients into centre of chicken breast and fold over.
2) Brush the top of the chicken breast with olive oil and sprinkle with mixed herbs.
3) Bake at 180-200 degrees Celsius until chicken is cooked through and golden brown on top. 
Serve with salad or a stack of steamed green beans.
