Almost any food can be marinated.
Meat, poultry, fish and vegetables can all be enhanced with a good combination of herbs and spices.
A liquid marinade imbues smaller cuts of meat with extra flavor and can protect meat from drying out.
Alternatively, a spiced rub massaged onto the surface before cooking is great for larger cuts of meat.
As a general rule, marinate seafood for no more than 45 minutes; small pieces of meat and poultry for no more than two hours; and whole chickens and other large cuts of meat can be left overnight.
Remember, if your marinade contains sugar you’ll need to check it regularly, don’t let the sugar burn.
